A tart with baby marrow

 

Ingredients:

TART: 200 gm soft margarine

1 egg, 2 teaspoons baking powder

flour as much as it takes for a soft dough

(all purpose)

FILLING: 2 medium baby marrows

1 egg

1 piece of feta cheese

Grated gouda (as much as preferred)

Fennel (or dill), ground black pepper

thinly chopped olives(optional)

 

Method:

Prepare the pastry for the tart, coat with it the greased pan, dab it with a fork. Bake it in the pre-heated oven, with air at 200 degrees Celsius, for about 7 minutes.

Wash and clean the baby marrows (cut off the ends and if you prefer peel off the skin), grate them and simmer in a saucepan until the liquid has evaporated, add the mixture of the 2 cheeses with the eggs, sprinkle the seasoning. Dish the filling over the pre-cooked tart and bake for another ½ hour at 200 degrees.
